The menuless bars of Ginza perfecting the classics, the mad scientists using lab equipment to create the impossible, the Prohibition-style speakeasies nodding to the past - cocktailing has room for everyone to do their own thing.
We’ll work with you to achieve the best version of “your thing” possible. We welcome your unique goals and challenges, for we believe that constraints breed creativity. Got a craft distilling license that limits the bottles you can use? Looking for drinks that will pair with specific dishes on your menu? Wanting a cocktail lineup stocked with light crowdpleasers, complex creations for aficionados, or something for every palate? We’re here to give you the cocktails you want to serve.

The name of a cocktail is more than just a way of keeping track of recipes. It’s often the first thing your guests learn about a cocktail, as much the drink’s face and clothing as how it looks when served. The name tells your guests what tone you’re trying to set, what inspiration you’re drawing from, and overall just who exactly you are.
We want your cocktails to tell your story, loud and clear. Perhaps there’s a book or song you’d love to see translated into a drink. Maybe a recipe we float you brings back memories of a time or place in your life. Or perhaps there’s just a certain vibe you’re going for with your menu. However you want to approach it, we’ll make sure your recipes receive names that uniquely suit you and descriptions that are as brief or free-flowing as you’d like.

The farmers of California and those who turn their products into food and beverages are among the best in the world, and many of them call the Central Coast home. Go into any fine restaurant here, and even before the menu tells you, you know which farm raised the lettuce and which creamery churned out the butter. Flip over to the wine list, and you’ll see a menu dominated by vineyards just down the road, along with local breweries represented on the beer list.
Your cocktail menu can also celebrate the makers of great products from our corner of the state, and not just by using syrups and cordials made with local, seasonal fruits. Distilleries on the Central Coast are creating world-class bottles in a mission-driven manner, whether that’s tasting the orchards in their backyard or fermenting with produce that would otherwise go to waste. While a few of these are available nationally, most don’t travel very far - why not deliver for your guests cocktail experiences they can’t find anywhere else?
About the Name:
Darling Rose is a flip of the Steely Dan song “Rose Darling” that represents my embrace of the wonders California has to offer.
The two core members of Steely Dan were a pair of guys from New York who moved to California for the music industry. They… never felt quite at home with the differences in lifestyle and vibes. Listening to them as a kid while commuting to Manhattan for school, they were a major part of shaping my ideas about how I’d feel if I ever lived “out there.”
Well, now I’m out here, and I love it. It’s not just the perfect weather and views of mountains overlooking the sea. It’s the access to some of the world’s best agricultural products and a culinary community that can craft them into superb food and beverages. It is a privilege to live here and be a part of this community.
Steely Dan’s lyrics were loaded with cryptic allusions and irony. I think they’d appreciate the irony of somebody twisting the words of a deep cut of theirs into a love letter to the California dream.
